We’ve seen donuts evolve from Homer Simpson’s favorite snack into haute treats, cupcakes go from childhood delights to wedding must-haves and popcorn transform from movie basics to gourmet fare. What’s next? The evolution of the eclair.

I have many fond memories of eating elairs as a child. Every bite was the perfect combination of pastry, whipped cream and chocolate icing. If only these delicious little bites of heaven looked then as they do now. Patisseries like Fauchon (images in top row below) and chefs like Christophe Michalak (images in bottom row below) have brought fun, excitement and art to eclairs.

So, plllleeeaasse next time, instead of cupcakes, think eclairs.
